Fusion of Mediterranean and Indian Cuisine
This work was born in the fall of 2017 through a collaboration with the world-renowned jazz band 'Chell Sust & Augusto Tarraz Trio' from Barcelona. Its innovative concept aims to connect two different worlds, jazz and cava, and provide a new sensory joy to daily life. A carefully selected single variety from the biodynamic single vineyard 'Les Vignes Blanches' in the Vallée de la Marne, made from 100% biodynamic Chardonnay, and a 100% vintage from a single year! Of course, it uses 100% Cœur de Cuvée! The primary fermentation is done in 100% oak barrels (to emphasize freshness, malolactic fermentation is not performed), aged for at least 36 months with zero dosage, resulting in a mythical R.M. Champagne. A single plot, a single grape variety (100% Chardonnay), and a 100% vintage! It has a greenish-gold color with lively fine bubbles. The aroma features floral notes of daffodil and mimosa, followed by fresh honey, and then plant scents like fern, along with almond, fresh hazelnut, bread, and iodine. On the palate, it is sharp at first, but then gains depth with notes of white pepper. The quality of the bubbles and acidity is excellent, providing a solid structure while remaining creamy! The finish has a mineral sensation of salt and lime, with a long, rich aftertaste that evokes nutty aromas.
Gravner, a unique presence for enthusiasts, produces wine with natural cultivation while minimizing human intervention. No pesticides are used in the vineyards, and not only are chemical fertilizers avoided, but even compost is not used at all. The 17-hectare vineyard has several ponds and about 200 bird nests have been confirmed. It is said that wild birds eat harmful insects from the grapes. The production volume is about 30,000 bottles from 17 hectares, which is only about 30% of what a typical producer would yield, and it is not produced for sale. Until the 1990s, stainless steel tanks were used, but since 2001, fermentation has been done in amphorae (clay vessels) and aged in large barrels. The soil from Georgia is optimal and is transported from Georgia. Amphorae of about 3,000 liters are buried underground, where destemmed and crushed grapes are placed, and fermentation occurs using only wild yeast. After fermentation, without removing the skins and seeds, the mixture is covered and aged for 5 to 6 months, then pressed and transferred to large barrels for aging for one year before bottling. This winemaking process, which has reached its current form after long trial and error, utilizes fermentation vessels with a history of several thousand years. Through innovative winemaking, a wine with a unique personality is born. It has a deep color, a rich texture, and abundant tannins, yet remains pure. The taste is as if the energy of the grapes themselves has been extracted.
The year 2016 was a dream vintage for Dario. From flowering to harvest, there were almost no diseases, and the ripeness, sugar content, and acidity of the grapes harmonized at a very high level. It was a year when Dario was able to harvest in the best condition of his winemaking! It surpassed the legendary year of 1999, which is still talked about today. Dario decided to stop the regular production of Trebeč and focus solely on the Selezione. The traditional assemblage wine of Oslavia, the regular 'Bianco Trebeč' ferments Pinot Grigio first, then adds Chardonnay and Sauvignon Blanc, soaking the skins and juice together for 18 days before aging in large barrels for 24 months. The 'Bianco Trebeč Selezione' undergoes an even longer infusion of over 40 days and more than double the aging! It is a traditional assemblage wine from Oslavia that is only produced in exceptional years.
Celebrated as 'the best white wine producer in Italy' and 'the one who changed the history of white wine,' the charismatic Josko Gravner is respected by producers around the world. He makes wine in Oslavia, located in the northeastern part of Friuli-Venezia Giulia, near the Slovenian border. Notable figures such as Gian Franco Soldera of the solitary Brunello 'Case Basse' and Anselme Selosse of the pinnacle Champagne, Jacques Selosse, are mentioned as 'the most respected producers in Italian wine.' He reveres Masanobu Fukuoka, the father of natural farming in Japan, and his winemaking maximizes the high potential of grapes through cultivation that respects nature and minimizes human intervention, creating wines that are great and uniquely distinctive.
