With 3 sheets of seaweed, 1 slice of chashu, and spinach, this broth is made from a balanced blend of three types of pork bones and chicken bones, maximizing umami. Additionally, it features a deep richness and punchy flavor without the heaviness of back fat, using chicken oil instead. The noodles are from Sakai Seimen, a traditional and authentic brand that was introduced to me by the owner of the shop where I trained, who trusted me enough to allow their use for the first time.
