This is a pickled dish from Yamagata, and the moment you open it, the aroma is delightful and exciting. Ban-giku is packed with wild vegetables and other ingredients, and the more you chew, the more the umami spreads. It has a moderate sourness and a pleasant crunch, making it perfect to enjoy on its own or on top of rice. Pouring hot tea over it for a light meal is also a great option. Nanban miso has a sharper spiciness than expected, and just a little bit enhances the flavor of the dish significantly. It can also be used as a filling for rice balls, and it's nice to be able to store it and enjoy it little by little.
