A dish that is firmly smoked while retaining its freshness, uniquely crafted in-house. It pairs wonderfully with a Japanese-style sauce, making it a surprising plate.
This is a hot Ajillo. It is simmered in olive oil with vegetables harvested in Chita.
It is simmered slowly for 5 to 6 hours, allowing you to easily pick it up with chopsticks. With a generous amount of red wine, you can enjoy a rich and robust flavor.
