In order to deepen our understanding of sake, the owner personally visits sake breweries across the country, learning from brewers, toji (master brewers), and kurabito (brewery workers) through various experiences and stories. We offer unique sake brands that are only available locally, purchased directly from the breweries, and we have a selection of 10 different types of sake available at all times. The ingredients include 100% Gohyakumangoku rice grown without pesticides or chemical fertilizers by the brewers in Hodatsushimizu, Ishikawa Prefecture. It is brewed using a wooden vat for the fermentation process, incorporating the brewery's own lactic acid bacteria, and fermented with Kanazawa yeast. The aroma features notes of pear and banana from the yeast, along with a creaminess from the lactic acid bacteria and a nutty flavor from the aging process. The mouthfeel is rich and full-bodied, with a delicious rice flavor and a sweetness characteristic of namazake, complemented by a gentle acidity unique to the kimoto method, leaving a pleasant aftertaste.
Ingredients: Yamada Nishiki rice, polishing ratio 35%, alcohol content 16% to less than 17%, sake meter value +2.1, acidity 1.4. The king of sake rice, 'Yamada Nishiki', produced in Tottori Prefecture, has been polished to 35% using our own rice. The koji is made using a wooden box called 'Morobuta', and the brewers take turns staying overnight to care for the koji, resulting in high-quality koji that produces a clean sake. The long-term low-temperature fermentation gives it a very soft mouthfeel, and the fragrant aroma that wafts through the nose is a very pleasant sake.
A high-quality Daiginjo made from Yamada Nishiki rice produced in Hyogo Prefecture, polished down to 40%. It has a robust and rich flavor unique to Yamada Nishiki, with a perfect balance of moderate aftertaste, making it a very high-level sake. The fragrant Koji yeast is known to be one of the more difficult yeasts to handle due to its tendency to produce a vibrant aroma.
This sake is made using rice cultivated by local farmers near the sake brewery. It allows you to experience the terroir of rice grown in the same water source and air. This sake, which is rich in umami, heals the tired body after a long day's work, fulfilling the desire of Mr. Naohiko Noguchi for delicious sake. It has a fragrance reminiscent of Eastern flowers, with a silky smooth texture and a milky richness.
Junmai Ginjo brewed with yeast extracted from the precious olives of 'Shodoshima'. The rice used is Ooseto from Kagawa Prefecture. It is carefully brewed at low temperatures, resulting in a refreshing floral green aroma and elegant fruitiness. It has a rich and smooth texture with a gentle sweetness, fresh and lively acidity, and a crisp, refreshing aftertaste.
Carefully brewed by master brewer Toshiyuki Ueno, this limited distribution sake from the home of ninjas, Koga, is 'Ninja'. It is neither too sweet nor too dry, bringing out the flavor and umami of the rice.
This is a seasonal project where the toji personally selects sake from the stored unshipped sake that he wants you to drink at this time of year, and it is shipped for a limited period. This time, we have selected the 2023BY 'Kuramazaka Yamahai Junmai Ginjo Sake'. It has a refined aroma that subtly suggests banana, European pear, and white peach, along with a good balance of umami and acidity, and you can also feel a youthful freshness in the initial aroma and aftertaste.
Kanagaso is named after the land where the Noguchi Naohiko Research Institute is located. The beautiful natural environment and the blessings of the earth are expressed and created by Naohiko Noguchi in this new product line, 'Kanagaso,' a sake that colors the ordinary days with healing from nature. It has a gentle, sweet aroma derived from rice. Like pure flowing water, the smooth texture is pleasant, followed by a moderate richness. After the umami derived from the ingredients of this land spreads throughout the mouth, a balanced aftertaste of the five flavors quietly fades away with a crisp finish.
This is a recommended product by the toji, brewed slowly at low temperatures for 30 days using Matsuyama Mitsui from Matsuyama Prefecture, polished to 55%. It has a delicate ginjo aroma, a light mouthfeel that enters smoothly, and a refreshing citrus acidity that is pleasant. Despite being a genuine junmai ginjo sake from Bijoubu, the price is surprising. Please be sure to try it at least once.
This is a special version that was bottled immediately after being heat-treated and cooled using a fresh-tasting pasteurization method, and then slowly aged in a special ice storage at minus 5 degrees Celsius. The long-term low-temperature fermentation has brought out a deeper and more powerful umami flavor of the rice.

The 'Galaxy Railway' selects large grains from pesticide-free rice grown under local contract farming, using only the center part. After low-temperature pre-fermentation, the good parts of the mash are collected by dripping through a bag, and then aged for a long time at low temperatures. The 'Secret Drop Sake' is a legendary sake that has been slowly aged at temperatures below three degrees.
