our friends and customers at cirino's italian restaurant in nevada city enjoyed this calamari for the past 30 years. people are constantly asking the secret of our calamari. it is as follows: buy only the highest quality calamari steaks, take the time to tenderize it to perfection, bread it in your own fresh house-made seasoned bread crumbs, sauté until perfectly tender and golden brown, never deep fry, serve with your own killer tartar and cocktail sauces and a wedge of lemon. the secret is, that there is no secret. we just care enough to try very hard to see that you have a good time. or simply order the calamari. i like to order a green salad or small caesar with my calamari. great combination! jerry's wine recommendation: italian trebbiano d' abruzzo. tucker's beer recommendation: draft hefeweizen.
polenta was primarily a northern italian product. in fact, the people from southern italy called the northern italians "polenta heads." polenta, in years past, had a poverty stigma connected to it. today, however, you don't have to be poor to enjoy the rich and rewarding flavors of this ancient dish. our polenta is offered hot, fresh from the grill and topped with parmesan cheese and presented over a bed of marinara sauce. jerry's wine recommendation: banfi, col di sasso, cabernet/sangiovese. tucker's beer recommendation: negro modela.
or commonly known as the "bowla" these little things have been known to change people's lives right on the spot. i avoid them entirely! however, there are many poor souls constantly searching for change and the need for the "bowla" has turned to addiction. therefore, our commitment to serve is as strong as their addiction. no prescription necessary: best taken with alcoholic beverages. jerry's wine recommendation: all wines. tucker's beer recommendation: all beers excellent with our famous cirino's bloody mary.

when i was young, my sundays, every sunday, much too early, would start: "hey! you want me fry you some peppers. damn hot peppers here!" the whole household would wake to the exotic aroma of these wonderful peppers permeating the air. sunday mornings. my father celebrating the only way he knew how, in the style of naples, yelling and cooking simultaneously! his exclamation to the world: "it's good to be alive!" and when we feel this way we just have to cook or yell or sing or better, all of the above at the same time! small green hot peppers and large green sweet peppers sliced and slowly braised in a tangy tomato sauce. sounds simple. it is! the difficult part is to try to stop eating them.
