【Ichiryu's Eel】Eel farming in Japan involves releasing young eels called shirasu into ponds from December. The earliest ones are available in the market from June. These young eels, known in the industry as 'shinko,' have soft skin, rich fat, and few small bones, making them delicious. At Ichiryu, we source these young eels from the Hamana Lake Fish Farming Association and offer them to our customers.
