Hitsumabushi is a dish made with market price domestic eel (produced in Mikawa, Aichi), liver, side dish, and rice served in a traditional wooden box. Enjoy the three-step eating process: first, eat the eel as is; second, add condiments; and third, pour broth over the dish. The dish is served in three portions: top, middle, and bottom.
