We use pork bone soup that has been simmered for a full day using only pork heads. The soup is characterized by being extracted twice and aged at low temperatures, resulting in a rich flavor. It is served with a homemade spicy miso made from several types of chili peppers and seasonings, along with fragrant homemade oil infused with garlic and onions. At the restaurant, you can choose your preferred noodle firmness!
This dish uses a silky, authentic pork bone soup that has been simmered for a full day using only pork heads. It features a refined taste with a punch of umami, characteristic of 'Korezo Uma.' While it has a rich umami and deep flavor, the aftertaste is refreshing. The noodles are kept short to allow for a vigorous slurp.
The brown pork bone soy sauce soup, simmered with pork bones, chicken carcasses, and aromatic vegetables, is the origin of Hiroshima ramen known as 'Chuka Soba.' Its rich flavor and refreshing taste make it a traditional bowl from Hiroshima.
Our style of fried rice is cooked quickly over high heat to achieve a moist and fluffy texture. We enhance the flavor by incorporating the braising liquid from the char siu, and the deliciousness of each ingredient bursts forth with every bite, creating a harmony with the ramen.
Our original gyoza, bite-sized, is served with a crispy skin filled with a sweet and flavorful mixture of plenty of vegetables and meat. It goes well with vinegar soy sauce and chili oil, and pairing it with yuzu pepper is also good!
Enjoy our homemade braised pork belly chashu, carefully simmered, paired with mustard and spicy miso, served with crunchy bean sprouts!
A classic menu item that becomes addictive, stir-fried with homemade pork belly chashu, bean sprouts, and garlic chives over high heat, creating a perfect combination.
Custard, caramel, whipped cream. A smooth pudding with a focus on all ingredients.
