This Hakata Mizutaki course is our specialty, using luxurious "Kawamata Shamo," a brand-name chicken produced in Kawamata Town, Fukushima Prefecture. The additive-free muddy white soup, cooked slowly for a long time, is rich yet has a clean aftertaste. You can fully enjoy the original flavor and richness of the gamecock. After appetizers to whet your appetite, you will be served mizutaki nabe (hot pot) with Kawamata shamo thigh, meat of the leg and the breast, special tsukune (chicken ball), and aromatic celery. To finish, you can choose from zosui (rice porridge) or special ramen noodles in a broth that is full of flavor. This is a highly satisfying course that brings out the best of the ingredients.
This miso-based nabe is made by mixing Hatcho miso to your liking based on the powerful flavor of Kawamata shamo. The more you chew, the more flavorful the shamo meat becomes, and the tsukune (tsukune meatballs), which are packed with flavor, are combined with vegetables such as burdock and garland chrysanthemum to create a nabe in which you can enjoy the changes in thickness and richness of the miso. To finish, we offer udon noodles served in a broth that is infused with flavor.
