The angel shrimp raised in New Caledonia, known as the island closest to heaven, is full of sweetness and umami. The crispy fried heads are also a delicious addition to this dish.
A popular menu item. Perfect with both wine and beer. Be sure to use the leftover anchovy sauce with focaccia. A dish that is also popular with children.
Potato salad flavored with basil, served with prosciutto. If it's not basil season, it may be substituted with another type of potato salad.
