There are various legends, but it is said that about 600 years ago, when the Emperor of the Southern Song Dynasty in China came to the New Territories of Hong Kong to escape the pursuit of the Yuan army, the villagers prepared to host the suddenly arrived emperor by offering all kinds of high-quality ingredients and delicacies on a tray.

Poon Choi contains 12 types of auspicious ingredients, such as oysters (for business prosperity), abalone (historical silver coins), and hair vegetables (for wealth = may a lot of money come in). It is said that by eating these, the luck for the coming year improves and wishes come true.

The ingredient at the top is a type of seaweed that grows on land called 'Kaminana'. The name is a play on words: it is called 'Kaminana' because its appearance resembles hair, and it is a pun on the similar-sounding Chinese phrase 'fa cai' (may you have a lot of money).

Dried abalone and dried scallops are considered auspicious items for attracting wealth and prosperity because they resemble the shape of the old currency 'Yuanbao'. They carry the meaning of wishing for money to come in.

Shiitake mushrooms from Shizuoka. Like in Japan, they are one of the essential auspicious items for the New Year.

The fish swim bladder is a high-end dried product, alongside shark fin. The wordplay: 'fish' (yu) and 'surplus' (yu) combine to form 'year after year surplus,' which carries the wish for an abundance of wealth.

The term 'large shrimp' sounds similar to 'great laughter,' and the 'large shrimp with head and tail' symbolizes the hope that the entire family will gather together with smiles.

The word 'chicken' sounds similar to 'good fortune' and is an essential ingredient for celebrations.

Duck is a commonly used ingredient in southern Guangdong and is one of the signature dishes of Cantonese cuisine.

It takes time and effort to rehydrate after drying, but it is highly nutritious.

The term 'Oyster Dried' sounds similar to 'good market (prosperous)', and is considered to bring good fortune.
