The owner, hailing from Kitakyushu, prefers the chewy udon from Fukuoka. The quest began to see if we could add the chewiness of Fukuoka to the firmness of Sanuki and the delicious dashi of Kansai. For many generations, delicious noodles have been a challenge. The noodles are made using high-quality wheat from Kitakyushu called 'Chikugoizumi.' This soft-textured, flavorful, and aromatic high-quality wheat is blended secretly to create gentle and chewy udon. Water content: 44% to 46%, salt concentration: 13% to 16%, cooking time: 15 to 18 minutes, adjusted for each season. Udon is named after its local area, such as Sanuki udon, Osaka udon, and Inaniwa udon, and is loved in those regions. We wanted to name it after Nara, so we named it 'Akishino Udon' in honor of the chef's hometown, making it a beloved specialty udon originating from Nara.
【 Ibusuki Bonito 】Many people associate bonito flakes with Makurazaki. However, there are many bonito flake shops in Ibusuki, located in the southwest of Kagoshima Prefecture, and we have carefully selected handmade products. We use the finest bonito flakes, which account for only 1% of the total distribution. It's the best. 【 0.01mm Ultra-Thin 】The bonito flake shaver we use was proposed by the third-generation president of a shaver company in Osaka. It shaves the bonito, recognized by Guinness as the hardest food in the world, into ultra-thin slices of 0.01mm. The 0.01mm ultra-thin bonito allows you to experience the original flavor of bonito directly. The aroma and taste provide an emotional experience. 【 Exceptional Dashi 】Using natural ma-kombu that is not commonly distributed and the finest bonito flakes from Ibusuki. This dashi, made from exceptional ingredients, is familiar to Kansai people. Even on its own, it is excellent, but the dashi for Akishino Udon is enhanced with an additional 0.01mm bonito, adding depth to the flavor, making it truly an exceptional dashi.
〜Secret of Deliciousness〜✔︎ The cold udon noodles are made with Akishino udon, maintaining the chewy texture while being finished as a smooth, easy-to-swallow thin noodle. You can fully enjoy the rich aroma of carefully selected high-quality wheat.✔︎ Special dipping sauce for zaru udon The 'special sauce for zaru udon' combines a broth made from thickly shaved bonito flakes and kelp with rich Miyadaki soy sauce, creating a perfect pairing with the thin noodles.
