A feature of this dish is the 'okoge' that is unique to pouring sauce over freshly cooked rice in a kettle, which is not found in traditional hitsumabushi. Additionally, by adding freshly grilled domestic live eel, you can enjoy its fragrant taste.
Before the rice becomes rice, a secret sauce is added and cooked together. The sauce penetrates to the core of the rice. Eel is also added during the cooking process, so you can enjoy the deliciousness of rice and eel combined, which is not found in the typical 'Ginshari Kamamabushi'.
We prepare domestic live eel upon order, marinate it with our secret sauce, and grill it over charcoal.
