The seasonal sushi is different from the rice to the vinegar. The rice is sourced from Shiga's rice master 'Jurokudaime Matahachi'. The vinegar used is 'Kokonoe Saika Junmai Red Vinegar' from Wakayama. The toppings include natural sea bream, bluefin tuna belly, and live shrimp. We also use carefully selected ingredients such as our special seasonal egg and eel from Awaji.
