The lamb shoulder roast has a good balance of lean meat and fat, making it a classic cut for Genghis Khan. It is the part where you can most enjoy the delicious flavor of healthy lamb meat.
Lamb tongue is the tongue of a young sheep. The amount that can be obtained from one animal is small, making it a very rare cut. It is characterized by its fine texture, tenderness, and juicy flavor with minimal gaminess.
