This is the signature menu item that 95% of our customers order when they visit. The aging period to enhance the amino acids in the meat, concentrate the umami, and make it tender is 20 days. We take our time to thoroughly manage the temperature and humidity, ensuring safety. The thickness is an incredible 10mm!! That's five times the usual thickness! As a result, it is juicy with meat juices overflowing, and the texture is more than sufficient. This is a challenging cost performance among our meats!!
