Encouraged by the shocking encounter with 'crispy noodles', in 1993, I lit the grill at a small food stall village with just 8 seats. Over thirty years have passed since then. The taste of Hiroshima, loved in Shimonoseki. Every day, I put my heart into grilling each piece. The deliciousness is not just 'flavor'. It's a commitment to the ingredients. A passion for the grilling process. The connections between people. A feeling of 'thank you for coming today'. I believe that today is definitely tastier than that day. I hope you feel that way too. In fact, our establishment has been selected as one of the 'Top 100 Restaurants' on Tabelog for four consecutive years. We have also been featured on various television stations. Additionally, we have been covered by Yahoo News and others, and I am truly happy that the flavors we have been diligently grilling in our local area are being recognized like this.
The hint is the local soul food of Shimonoseki, 'Kawara Soba.' We wanted to express that crispy texture, which is grilled on heated tiles, using okonomiyaki noodles - and thus development began. The 100% domestic wheat Chinese fresh noodles turn golden brown on the iron plate, releasing the aroma of wheat. The first bite's crispiness, the light texture, followed by the sweetness of cabbage and the fragrance of the sauce. The deliciousness of the noodles enhances the entire dish - that is Hirohiroya's okonomiyaki.
The goal was to create a flavor that is neither just sweet nor just spicy. This is a sauce unique to Hirohiroya, featuring a rich sweetness characteristic of Hiroshima-style okonomiyaki, layered with a lingering spiciness. Based on Carp Sauce, it is uniquely blended with six types of spices. For over 30 years since its establishment in 1993, we have gradually refined a drop that people in Shimonoseki can feel is 'delicious.' The sweet aroma rises with the heat of the iron plate, and the moment the spices come together—it's a sauce that makes you want to hurry to the next bite.
The choice of Hirohiroya is Cold Ball Cabbage. This cabbage has a rich umami and a strong sweetness, which is wrapped in a crepe-like dough and slowly steamed on a hot plate. Instead of rushing the cooking process, we take our time to apply heat, which makes a difference in the first bite. We use different regions for the cabbage depending on the season, ensuring that it is always served in the best condition. We also selected thick bean sprouts that do not get overshadowed by the noodles. The sweetness of the cabbage, the freshness of the bean sprouts, and the aroma of the noodles—this combination creates a sense of unity that is characteristic of Hirohiroya.

The difference in texture and the overlapping flavors are enjoyable, making it a satisfying dish that you won't get tired of until the end.
