A new standard at izakayas. A crisp and dry junmai sake. It uses rice polished to the level of daiginjo for the sake mother and noodle rice. While it has a light mouthfeel, it also has sufficient umami and aroma. This reasonably priced junmai sake has a good clean finish. Glass 550 yen, Bottle 2,700 yen.
