Nokke sushi is a dish where a generous amount of seafood toppings such as sea urchin, salmon roe, and tuna are placed extravagantly on top of a natto roll.
The commonly seen 'Negitoro roll' often has tuna scraps mixed with animal fat. At Yutaka, which originated from a sushi restaurant, we have challenged this by using only authentic medium fatty tuna and green onions, creating a simple and hearty dish.
