In the great nature of Minami Awaji City, pigs that are raised under plenty of sunlight and fed a high-sugar diet of 'bananas' are called Ebisu Mochi Pork. By drying bananas into chips and mixing them into the feed of three different breeds of pigs, the quality of the fat changes, and the sweetness significantly increases. The sweetness is not overwhelming, and the unique pork aroma is subdued, making it easy to eat with a light flavor. Additionally, in a rich natural environment with high-quality underground water and a warm climate, thorough hygiene management reduces stress, allowing healthy pigs to grow. Please enjoy the rare and highly regarded brand pork known as 'Ebisu Mochi Pork,' which is even referred to as the 'ultimate pork.'
For the hot pot, we use salt from Miyagijima, salt from Ie Island, salt from Rahaku, and for chicken rice, we use salt from Yoron Island. For other dishes, we use salt from the Goto Islands, salt from Awaji Island, plum salt from Wakayama, and herb salt from Ehime. 'Nuchimaasu' means 'salt of life' in the Okinawan dialect. It signifies that the sea of Okinawa, which contains all the essential minerals needed for living organisms, is the source of life. 'Nuchimaasu' is made solely from seawater on the Pacific side of Miyagijima in Okinawa, using the world's only patented method called 'room temperature instant air crystallization method,' which crystallizes the mineral balance of the bountiful sea without breaking it. It has been certified by Guinness as the salt with the highest mineral content in the world, and it is about 25% lower in sodium compared to regular table salt, with expected health benefits.
