This course offers the best of Hokuriku with a sumptuous selection of popular ingredients. The six-course menu begins with an appetizer that makes the most of Hokuriku's seasonal ingredients and continues with a soup that concentrates the bounty of Kanazawa Port. Thick abalones are grilled over charcoal in front of your eyes. Sukiyaki, carefully selected Japanese beef, is served Kansai-style, with the meat cooked in an iron pot and then seasoned. The meat is then seasoned and cooked in an iron pot in the Kansai style, and is dipped in the finest local egg. For dessert, we serve risotto with sweet prawns caught in nearby waters. The rich flavor of the prawns can be tasted in this dish, which is unique to this area.
