A broth made by soaking Rausu kombu and dried shiitake mushrooms in water, then adding Ibuki iriko, Setouchi whitebait, Sakai Port horse mackerel, and hirako to create the base soup. After straining this soup, it is left to rest in the refrigerator for a day, and the next day, more Ibuki iriko, Setouchi whitebait, Chiba blackback, and ground chicken are added and simmered at a temperature where the surface bubbles. This results in a fragrant and rich niboshi soup. Please enjoy.
