Kouné is a staple in Hiroshima. It is a rare cut from the chuck roll, with only a small amount available from each cow. Enjoy this Hiroshima specialty that is juicy yet has a light flavor!

The soba used in our okonomiyaki is made with fresh noodles from 'Isono Seimen', a manufacturer specializing in okonomiyaki noodles. By frying the special noodles until crispy with oil, we create a fragrant and crunchy texture that pairs well with the okonomiyaki sauce.

The sauce uses the 'Michan Original Okonomi Sauce' that was completed after half a century. This mild and rich sauce is not an exaggeration to say it is the key to the flavor of 'Michan Sohonten'. It is also very popular as a souvenir.

One of the charms of 'Micchan' is the craftsmen's skill, which can produce up to 800 pieces in a single day. At our restaurant, we follow the policy of Mitsuo Inoue, who wants to provide the same deliciousness to all customers, so multiple craftsmen share positions to cook the okonomiyaki.
