This is the basic Kaiseki meal served at Tate-Shinano Ai. The main dish is steamed Japanese beef with wine and our famous seasonal vegetables. You can enjoy melt-in-your-mouth Shinshu beef and seasonal vegetables in a rich broth made by mixing milk with a special soup. Please dip it in a refreshing ponzu sauce before eating. The final dish of the hot pot is mochi.
Shinshu beef, raised in the vast nature of Shinshu and fed with apples, is characterized by its high-quality meat and umami flavor. The specially made dipping sauce soaked into the meat pairs perfectly with the fluffy meringue.
