This skewer is pursued to achieve 'crispy on the outside, juicy on the inside' by raising the charcoal fire to the highest temperature and quickly grilling it. We would be happy if you could enjoy it promptly when it is served on the table.
The tsukune that children love has risen to become a dish for adults as well. Our tsukune is carefully grilled at a low temperature at the start, and finished with a nice sear at a high temperature before serving. It pairs well with beer and shochu with our homemade sauce. For sake, we recommend using salt made from ground rock salt.
You will understand once you eat it. This is our shop's natto omelette, which the owner conceived and, after much trial and error, added to the menu as something that seemed like it should exist but didn't.
Don't think that this is just any tsukune. This tsukune is different. The stick tsukune is mixed with shiso, quickly dipped in homemade sauce, and served with a touch of beaten egg yolk. There's no doubt that your usual drink will taste different.
First of all, it's fresh! First of all, 3 pieces! Please feel free to order. The owner will select fresh grilled chicken lined up in the glass case and will serve it deliciously and carefully, hoping you want to eat more.
This is just the right amount for small orders, such as for friends or couples. Two skewers per person, but what to do with the last one... the owner is very curious.
