【Most Popular】By using a beef bone broth as the base, it creates a rich and mellow soup. At first bite, it feels light, but as you continue eating, the umami of the offal blends in, resulting in an even more exquisite soup by the end.
A rich and sweet soup based on beef bone broth, featuring a prominent sweetness blended primarily with Saikyo miso. It pairs well with cheese, and for the finale, egg and cheese risotto is recommended.
[Deliciously Spicy!!] In addition to various spiciness from gochujang and doubanjiang, the acidity from tomatoes and red wine is also included, and the sweetness of the ingredients blends into this soup, creating a deep flavor that is not just spicy.
The base for all soups at Motsusuki's motsunabe (salt, white miso, spicy miso) is our homemade beef bone dashi. We add various vegetables to beef bones and simmer them in a large pot for over 8 hours, allowing the flavors to meld slowly. To ensure that no off-flavors or impurities enter the dashi, we carefully remove excess scum and fat while dissolving the ingredients. This time and effort result in a rich, milky, and cloudy dashi, which is then finished with our special salt sauce or miso sauce to create the soup.
The small intestine (motsu) used in our motsu hot pot is sourced entirely from carefully selected Yamagata Prefecture. Motsu, like other meats, varies in fat content and flavor depending on the cattle's rearing environment. Additionally, it deteriorates quickly and can develop an unpleasant odor. While some of the odor can be mitigated through preparation, this can also result in the loss of essential umami and sweetness. At Motsu Sui, we use fresh motsu from Yamagata Prefecture without any prior processing. This allows us to provide our customers with the original umami and sweetness of 'motsu' without losing any of its qualities.

For the salt flavor, we have Chinese noodles; for the white miso flavor, we have egg cheese risotto; for the spicy miso flavor, we have cheese risotto. We will add dashi, but it is better to leave some behind instead of drinking it all for a more delicious finish.
These are handmade gyoza, a specialty of Motsuiki. We marinated plenty of vegetables and minced pork in a special sauce, and carefully wrapped each piece of the dough with the filling. We hardly used any garlic.
We simply grilled carefully selected small intestines (offal) from Yamagata Prefecture. Please enjoy the sweetness of the offal.
We use lean thigh meat delivered directly from Kumamoto. The meat is very tender and has no unpleasant odor. Horse meat, especially the lean cuts, is low in calories and is a healthy option. It is sourced from Kumamoto. Enjoy the authentic taste with a sweet soy sauce.
