A tandoor is a cylindrical clay oven that burns charcoal or wood at the bottom and cooks food at high temperatures. To maintain a high temperature of up to 480°C, it is typically used with a fire kept burning for long periods. When baking naan, the dough is stuck to the inside of the oven, and meat or fish is pierced with metal skewers and placed inside the oven to cook. This cooking method is used in a wide region from North India to Afghanistan, and its origins can be traced back to the Indus civilization, making it a very traditional cooking method.
