100% buckwheat noodles are made fresh upon order using only seasonal Hokkaido buckwheat flour and water, with no wheat flour used at all. The smooth texture and mouthfeel, along with a subtle sweetness, create the special flavor of 100% Sarashina Soba.
Juuwari Soba is made fresh after receiving an order, using Hokkaido-produced buckwheat flour 'Kita no Sato'. This soba, which incorporates the sweet skin of buckwheat seeds, highlights the original aroma and flavor of the soba.
The thick noodles made with 80% buckwheat flour 'Furusato' from Hokkaido and 20% wheat flour 'Yumechikara' from Ebetsu, blended with buckwheat husks, have a strong flavor with the sweetness and aroma of soba.
