A hidden popular menu item from Merimero Original. We soak raisins in sake lees from a famous sake brewery in Nagaoka, waiting for the essence to permeate and for everything to mature into a cohesive whole. We then combine it with butter and wait for further maturation before serving, checking the condition. It pairs well with red wine.
The lamb loin is grilled to perfection and tossed in a Sichuan-style sour and spicy sauce. It is not available during the cold season.
