It is served hot on a ceramic plate with a combination of beef tendon, konjac, egg, and thick fried tofu. A proud dish of Furaibo! Please enjoy. Using Okazaki Kaku-kyu Haccho Miso. <What is Haccho Miso?> A long-aged soybean miso produced in Hachijo (formerly Hachijo Village) in Okazaki City, Aichi Prefecture. Made only with soybeans and salt, without using rice or barley koji, it is packed into wooden barrels and naturally fermented for 1.5 to over 2 years, with stones piled to prevent gaps, resulting in a unique bitterness and umami flavor. Compared to other soybean miso (red miso), it has a lower salt content. The only two producers are Maruya Haccho Miso, originating from the Ota Yajiroemon family, and Kaku-kyu, originating from the Hayakawa Kyuemon family.

Enjoy the deliciousness in three ways: as is, with condiments, and as ochazuke! This is a variation of Nagoya's famous hitsumabushi, featuring grilled chicken seasoned to perfection. Please enjoy it in three different ways. Hitsumabushi is a dish where grilled eel is cut into pieces and placed on top of rice in a container, and it is eaten by serving it into a bowl. The name comes from the practice of mixing it in the container. There are various theories about its origin, but it is said that 'Atsuta Horaiken' served eel rice in individual ceramic bowls, but due to the high demand for takeout, it became common for delivery staff to break empty bowls on their way back. To address this, they started using larger, more durable wooden containers (ohitsu) and serving multiple portions in them for sharing. <Delicious ways to enjoy Chicken Hitsumabushi> 1. First, divide the hitsumabushi in the bowl into four portions. 2. For the first serving, take a quarter and enjoy it as is. 3. For the second serving, take another quarter and add condiments like wasabi or pickled ginger for a different flavor. 4. For the third serving, take another quarter and pour dashi over it to enjoy it as ochazuke. 5. For the fourth serving, take the remaining portion and enjoy it however you like.
