The previous owner repeatedly experimented at their family's noodle factory, using 100% wheat noodles, resulting in a texture similar to fresh pasta. Near the kura (traditional storehouse), the only soy sauce shop in Kawagoe that has been around for about 250 years, 'Matsumoto Soy Sauce', is used as the base for this dish. The aroma of burnt soy sauce is a tantalizing delicacy that whets the appetite. It pairs well with alcohol, so it's a must-try for drinkers. Carbohydrates are justice.
