At Ayakura, we base our noodles on 'Ni-Hachi Soba', which consists of 80% buckwheat flour and 20% noodle binder. The average ratio for machine-made soba currently in circulation is 50% buckwheat flour and 50% binder. The more wheat flour there is, the longer the cooking time, which can lead to a loss of aroma, texture, and nutrients. The cooking time for handmade soba is about 40 seconds to 1 minute. We deliver the aroma, nutrients, and texture of the soba directly to our customers.
80% of the buckwheat flour distributed in Japan is imported. Domestic flour accounts for only 20%, making it very difficult to secure and quite expensive. At Aizora, we use 100% domestic flour. We source buckwheat flour from the region that is considered to be the most delicious at that time. Please feel free to inquire with our staff about the day's source.
