This kettle-cooked udon is enjoyed with a special dipping sauce that has a spicy kick, inspired by the fierce personality of the first feudal lord, Lord Naomasa Ii, who was said to prefer leading the front lines even after becoming a top general. You can add sweet and savory Omi beef, pickled daikon radish, and napa cabbage kimchi to your liking, and finally, mix the udon cooking broth into the sauce to enjoy it as a soup.
Feared for his strong and rugged personality resembling his father, Naomasa, the second lord of the Ii clan who elevated the Ii family to the top position among hereditary daimyo. This luxurious udon is made by placing red premium Omi beef shabu-shabu on freshly boiled hot udon, and pouring plenty of dashi broth seasoned with red miso on top for a decadent meal inspired by Lord Naotaka.
This udon dish is inspired by the thirteenth lord, Lord Naosuke Ii, who dedicated himself to pursuits such as tea ceremony, poetry, and Noh theater, rather than being known for the major political events of the late Edo period. Using ingredients from Omi such as Omi beef, red konjac, fu with a cross-shaped incision, and pickled red turnips, this dish is elegantly prepared. Please enjoy each flavor as you savor this dish.
