The origin of Hikotori began with the desire to deliver the touching taste of 'Aizu Horse Sashimi' encountered by the president! Aizu horse sashimi made from thoroughbred horses... The refreshing taste of lean meat, unlike the typical fatty horse sashimi, is shocking! Specialty hot tofu with a generous amount of Aosa, made with Tanaiya's silky tofu, which won the Governor's Award in the 14th Nagano Prefecture Tofu Competition (using only Nakasenari soybeans from Nagano Prefecture).
