this pleasant dish is well known in rural china, the chicken is cooked slowly with rice wine, ginger, black mushrooms and scallions. the final addition of oriental coriander perfects this dish.

the chinese call these stewed large meatballs lion heads. the delicate colors, the rich aroma and flavor of the dish create a meal to delight the senses.

these 2 to 3 pieces per pound of shrimp are simmered in a hot pot with ancient tsingtao beer, and enhanced by the flavors of tomato, onion, celery and coriander.
