The heritage soup from the dining chain passed down since its opening in 2004 is a signature flavor of Matsuitei. It has a mellow and deep richness that never gets boring. You can enjoy it until the very last bite.
A classic hot pot featuring beef offal, cabbage, garlic chives, bean sprouts, tofu, and konjac. The soup is made by combining a rich broth simmered for a full day with fragrant fresh soy sauce that highlights the umami of soybeans, creating a gentle flavor that enhances the sweetness of the beef offal and cabbage. Udon or champon noodles are recommended for the finishing touch.
Ingredients: beef offal, pork, cabbage, bean sprouts, garlic chives, white onion, shiitake mushrooms, enoki mushrooms, rice cake, black konjac, tofu, and thin fried tofu. This classic hot pot from Matsui-tei blends white miso broth and soy sauce broth. The spicy miso broth, enhanced with special gochujang, clings perfectly to the beef offal and is addictive once you try it. Enjoy with a variety of ingredients that complement the spicy miso broth.
Ingredients: Beef offal, pork, coarsely ground sausage, lettuce, bean sprouts, garlic chives, white leek, shiitake mushrooms, enoki mushrooms, mizuna, spinach, tofu, and thin fried tofu. This clear salt broth is made by simmering beef tendon for a whole day, with a spicy accent from Mongolian rock salt and sea salt sourced from Izu Oshima. It is the only hot pot at Matsuitei that is served with lettuce for a light taste. For the finish, enjoy it with ramen and butter.

Parmigiano-Reggiano cheese is available to add to your preference.

First, this. A top-selling dish at Matsui-tei, made with plump domestic small intestines that are rich in fat, stir-fried until thickened with a secret sauce that has been preserved since the establishment of the restaurant. This dish pairs perfectly with beer and white rice.
