Inside the French chocolate mousse, we have included Yoichi-grown wood strawberries and Hira River Winery's red wine 'Zweigelt' confiture. This is a classic chocolate mousse cake with gold leaf on top.
Inside the mousse made with Hokkaido cream cheese, Takasago sake lees, and yuzu, we added haskap jam. Enjoy a complex flavor as you eat through it.
Caramel mousse with scattered Western pear compote. It has an adult taste using the whiskey Taketsuru.
A corn mousse filled with caramel and soy sauce. It has a cozy flavor reminiscent of roasted corn.
A refreshing strawberry mousse filled with custard cream and dark cherries. The refreshing sweet and sour taste is addictive, making it a dish that will make you want to eat another one.
A luxurious blend of four types of berries - dried strawberries, cranberries, cherries, and blueberries - soaked in cherry liqueur Kirsch. This rich and vibrant dish is irresistible to berry lovers.
A refreshing pound cake with hojicha and scattered oranges. The cake is made with finely chopped hojicha leaves, giving it a fragrant and toasty flavor. It has a comforting taste and is recommended as a tea accompaniment. It pairs well with green tea and other beverages.
A pound cake with a matcha base, filled with apricots soaked in brandy to enhance the aroma. The texture is moist, and the flavor is refreshing. The combination of green and orange colors is very beautiful and recommended as a souvenir.
Caramel and fig are combined in this masterpiece by the patissier Tsubota. Intense caramel is kneaded into the dough, resulting in a moist finish. The chewy texture of black figs soaked in red wine for two nights adds a refreshing accent. A hint of Cointreau liqueur can be subtly detected.
As the name suggests, the chef at Daiichi Hotei-ryu has steamed various vegetables individually and packed them into a pound cake. The dough uses steamed and mashed pumpkin, with vegetable chips as accents. This dish is a delightful representation of the gentle sweetness of vegetables and the essence of Japanese cuisine.
