Kawanakajima Duck is a type of crossbred duck that is only handled by 'Tsumura Honten' in Matsubara City, Osaka Prefecture. Since the early Meiji period, it has been raised with a consistent approach to feed types, breeding methods, and freshness management, resulting in a duck that is free of any unpleasant odor and can be eaten raw, boasting a juicy and rich flavor. Unlike beef, pork, and chicken, its fat has different properties that lower blood cholesterol and serve as a health food that helps prevent lifestyle-related diseases. Although it may be perceived as greasy, it is a healthy ingredient that, like fish oil, does not accumulate fat in the body.
