This is a very cheap and delicious dry junmai sake made with 80% polished rice. The polishing ratio is intentionally kept low at 80%, concentrating the umami and strength of the rice into this one bottle. It has a good aroma, a pleasant aftertaste, and is well-balanced, making it a sake that checks all the boxes. Additionally, it can be enjoyed both chilled and warmed, making it an all-rounder. Did you know that, like wine, there is aged sake? This is the H14BY from the 14th year of the Heisei era, a room-temperature aged sake. Of course, we use Yamada Nishiki rice from the special A district in Tojo, Hyogo Prefecture. After fourteen years, don't you want to try and see what it tastes like? We will include it in our menu in the future, offering a wide range from trendy sake to aged types. Stay tuned!
