Salted kelp: Kelp from Hokkaido is carefully processed with salt from Ako, Banshu. Ume plum: Ume plum paste carefully produced in Odawara City, Japan. Salmon: Salmon caught in Hokkaido is carefully seasoned with only rape oil and salt. The old pickled takana from Fukuoka is quickly sauteed over high heat to reduce the spiciness.
