The goal is to create a sake that is perfect for evening drinking, one that 'pairs well with food', 'is enjoyable to drink without getting tired of it', and 'does not leave a hangover the next day'. Even though it is a regular sake, it is carefully brewed using the techniques of ginjo brewing, polishing the rice, and fermenting slowly at low temperatures for an extended period, making it a sake that is both familiar and satisfying to drink. Due to its strong and exceptional sharpness, it is also referred to as 'Shiripin sake'.

The sweet aroma of ripe melon and apricot rises moderately, along with fruity scents reminiscent of pear, white peach, and pineapple. Despite its flamboyance, the fragrance is not unpleasant, and the wonderful balance matches the refreshing taste.
Like the special junmai sake, this is the main sake of Nanbu Bijin. It has a pleasant ginjo aroma, with a subtle spread of the sweetness and umami of the rice, yet it also has a crisp finish, making it a gentle, clean, and elegant junmai ginjo. It pairs exceptionally well with refined Japanese cuisine.
