博多牛肠锅 たじまや 国分町本店

Our proud motsunabe uses only the highest quality black-haired wagyu small intestines, carefully selected by the owner. By meticulously preparing the ingredients, we create a texture that melts in your mouth. We use sweet cabbage and garlic sourced from Tagomachi, Aomori Prefecture. The burdock root is also domestically produced, and the miso is our original blend. For the finishing rice used in the zosui, we use rice from Akita Prefecture, paying attention to every detail. You can choose from 4 flavors: miso, spicy miso, salt, and soy sauce. Please enjoy our exquisite motsunabe.

Miso, spicy miso, salt, soy sauce, numbing spiciness

One of the attractions of our restaurant is the ability to taste 'exquisite horse sashimi'. The horse sashimi, directly delivered from 'Koga Ranch', which is one of the few in Japan that insists on being strictly domestic, is 'top-grade horse sashimi' that would cost no less than 10,000 yen per serving at a high-end restaurant. The recommended 'horse sashimi platter' includes marbled and loin cuts. We also recommend enjoying it with a compatible sake while savoring the differences in texture, umami, and the sweetness of the fat. Due to the rarity of 'Koga Ranch' horse sashimi, orders are limited to one serving per table. Thank you for your understanding.

This is a loss-making menu item that costs 2500 yen for 100g at the purchase price. Reservation required.
