The key to its deliciousness is sourcing exceptionally fresh senmai. There is no other way. The safety point is to 'heat sterilize at a core temperature of 75 degrees Celsius for at least one minute.' Heating sterilization will somewhat diminish the unique crunchiness of senmai. Therefore, we need the freshly slaughtered, crunchy senmai of the same day.

In typical motsunabe specialty restaurants, the common method is to add raw offal into cold broth and cook it, known as the 'pre-addition method.' However, this causes the unique flavor of the offal to transfer to the broth. Our motsunabe adheres to the basics of cooking by adding the offal after the broth has boiled, known as the 'post-addition method.' The resulting broth is clear and free of any off-flavors, allowing you to enjoy the rich flavor of the offal to the fullest. We also offer a single serving of 'Motsunabe Single' for 2800 yen.
