Hakata jidori is said to be a descendant of the delicious 'Shamo' among the native breeds in Japan, allowing you to enjoy the increasing umami and the crisp texture with each bite. While regular chicken is raised for about 47 days, Hakata jidori is raised for over 75 days, with some being raised for more than 200 days. It is boldly seasoned with only rock salt and black pepper and grilled quickly over strong charcoal that flames up. This dish allows you to fully enjoy the fragrant aroma of charcoal and the umami of the jidori chicken. Available in 100g (serves 2-3), 200g (serves 3-4), and 300g (serves 4-5).
