燒肉すだく家族亭 彥根店

In Shiga Prefecture, only in Omihachiman City at the Shiga Meat Market, auctions for Omi beef are held. Our supplier, Sogo Omi Beef Merchant, purchases Omi beef as a participant in the Shiga Meat Center regional wholesale market. By purchasing from a trading company that buys whole cattle, we can offer rare cuts such as Ichibo, Misuji, and Frank at affordable prices, which are difficult to obtain in the market.

A5 refers to the beef grading system established by the Japan Meat Grading Association, where A, B, and C indicate yield grades based on the amount of meat obtained from a single cow, with quality grades ranging from 1 to 5 indicating the marbling. Currently, A5 is the highest grade, but most Omi beef is graded A4 or A5.

A meat processing plant is being built in Higashiomi City, famous as the hometown of Omi beef. Since the Shiga Prefecture meat center is located near Higashiomi City, it is delivered to the factory on the same day while maintaining high freshness. From there, it is directly shipped to our store, allowing us to offer products with higher freshness compared to other Wagyu.
