This is homemade chicken ham made by marinating chicken breast in salt koji and slowly cooking it at low temperature.
We make homemade miso using seasonal ingredients such as ginger miso, yuzu miso, and butterbur miso. We serve two types of miso with cucumber sticks. Cucumber sticks come with a free refill once.
A perfect assortment of three delicacies: tuna sake lees, salted squid, and fermented soybeans, ideal for pairing with sake.
This is from Mihara Tofu Shop located in Kashima City, Saga Prefecture, using their 'Phantom Thick Fried Tofu'. Please enjoy it with their dashi soy sauce.

We offer seasonal sake such as winter's new sake, spring sake, summer sparkling sake, and autumn's hiyaoroshi, as well as limited edition sake sourced from brewery openings. In addition to our regular offerings, we always have 5 to 7 different types available.
Sake brewed with sake instead of water, 'Kijōshu', sake made using the Kamakura period method 'Bodaimon-zukuri', 'Genmaishu' brewed with unpolished rice, 'Koshu' aged for over three years, as well as quite niche drinks like 'Doburoku' and 'Craft Sake' are also available.

This is a tasting of old sake that has been aged for a long time. There is also sake that is 30 years old.
Sake made using sake instead of water during the brewing process, 'Kijōshu', sake made using the 'Bodaigonzukuri' method from the Kamakura period, 'Genmaishu' which is sake made with 100% unpolished rice, and 'Mirin' made only with glutinous rice and rice koji, and authentic shochu... this is a tasting of such maniacal sake.

The Lemon Sour base is made using Meyer lemons from a designated farm and Omachi rice from the sake brewery 'Yamanosho' in Kurume Kitano Town.
The ingredients of Sanshu Mikawa mirin are only three: glutinous rice, rice malt, and rice shochu, with an alcohol content of 14 degrees. Real mirin can be consumed.
We offer craft gin made by the sake brewery 'Shinozaki' located in Asakura City, Fukuoka Prefecture, and several other Japanese sake breweries.
