Grilled generously over charcoal, this is the Amakusa Daisuke, a brand of chicken from Kumamoto, also known as the phantom free-range chicken. The fragrant flavor of charcoal enhances the overwhelming juiciness unique to Amakusa Daisuke, and the rich umami bursts forth with every bite. Enjoy it while it's hot.
This is a carefully crafted motsunabe that uses only selected, plump Japanese beef offal. You can choose from two types of flavors: a refined soy sauce broth with a rich depth and a blended thick miso made from several types of miso. Enjoy the soup, which is infused with the high-quality sweetness and umami unique to Japanese beef, down to the last drop.
This is our special clay pot rice filled with five carefully selected ingredients: salmon roe, snow crab, mentaiko, takana (pickled mustard leaf), and fragrant grilled fish, all cooked in a clay pot from a kiln that has been in operation since the Edo period. By slowly cooking it in the clay pot for each order, the umami of each ingredient seeps into every grain of fluffy rice. Enjoy the rich aroma that spreads the moment you open the lid and the luxurious taste that comes from freshly cooked rice.
