BAKE the SHOP コトチカ京都店

Born in Hokkaido and popular in Tokyo, this cheese tart is made with carefully selected ingredients. Focusing on the concept of 'memorable, bite-sized', the key point is the 'freshly baked' aspect. It features a fluffy mousse made with an original blend of cream cheese and a tart crust baked twice for a firm texture. The combination of the firm tart crust and the creamy and refreshing taste of the cheese mousse is enjoyed by many, from children to adults.

The matcha cheese mousse is made with Uji matcha 'First Bitter' specially blended by Kyoto Shokudoen's top-ranked tea master, Hiroshi Kobayashi, for 'BAKE CHEESE TART'. It combines cream cheese and mascarpone cheese to create a refreshing and mellow flavor that enhances the matcha taste. By using early-picked young tea leaves, it features a refined bitterness and aroma that harmonizes perfectly with the tart's sweetness. Inside the mousse, there is a red bean paste made with Hokkaido azuki beans, and on the surface, there is a topping of Hokkaido Dainagon azuki beans and kinako. With each bite, enjoy the changing flavors woven by the matcha aroma, the refined richness of mascarpone cheese, the sweetness of azuki beans, and the fragrance of kinako.
