Izumo Soba

Izumo Soba is one of the food cultures in the Izumo region. Its distinctive features are the dark-colored soba and the way it is eaten. The soba flour is made from unpolished soba (soba with the husk still attached). There are two ways to eat it:

Sandon Warigo Soba

This is the most popular way to eat soba in the Izumo region. A single serving of soba is placed in three stacked bowls, and each is topped with 'condiments' and 'dashi' to be eaten.

Boiled Soba Noodles

Boiled soba noodles are served in a bowl with the hot water (soba-yu) used to cook them. Thanks to the soba-yu, this dish warms the body with its thick texture. It is enjoyed by adding 'condiments' and 'dipping sauce' just like with a soba tsuke.
